It’s finally back! One of our longtime favorites here at Mudhouse “The Worka” is back and as lovely as ever. Worka refers to the name of the cooperative where the coffee is processed in the Gedeb region of Ethiopia. A member of the much larger Yirgacheffe Coffee Famers Cooperatives Union, Worka is comprised of over 300 members. The two organizations strive to promote transparency and sustainability in the Ethiopian coffee supply chain. We first encountered the Worka on our cupping table a few years ago and were immediately blown away by the exceptionally sweet, clean, & fruity notes present in the cup. Since then, with every new harvest, the Worka has continued to get more and more refined and elegant. Coffee is an agricultural product subject to ever changing environmental conditions and human inputs. As a result, harvests and their cup profiles will vary from year to year. We have observed this phenomenon with the Worka. Over the years we have noticed how fruity berry notes, while still present, now give way to more delicate florality. In our opinion, this is a testament to the hard, dedicated work done at the Worka cooperative. It takes a lot of time and effort to only pick red, ripe cherries and then continue a painstaking cherry selection process throughout the drying phase.
The Worka is an example of how a naturally processed coffee can also be clean and free of the murkiness of fermentation that many coffees get lost in. Due to that, we have come to refer to the Worka as a “gateway coffee,” a coffee that serves as an entry point for the uninitiated into the realm of specialty coffees. A coffee whose inherent quality easily stands out and is undeniable. Having worked on bar myself, I can attest to the strong attraction Worka has to our customers. In fact, chances are if you are reading this you already know the deal and have been won over by this exceptional coffee.
