We’re introducing Apple Notes, a washed Pacamara produced through a collaboration between Gold Mountain Coffee Growers and several smallholder farmers in Jinotega, Nicaragua. Pacamara is a hybrid variety created by crossing Pacas (a compact Bourbon mutation) with Maragogipe (a Typica mutation known for its very large beans).
It’s capable of producing exceptional cup quality at high elevations, but it’s also a low‑yielding, non‑uniform variety that requires careful management. The plants are compact, the seeds are unusually large, and the variety is highly susceptible to coffee leaf rust and other diseases, which makes selective picking and attentive farm work especially important. Grown between 1300–1500 meters, Apple Notes is processed using a precisely timed 18.47‑hour washed fermentation to maintain clarity and consistency.
Gold Mountain Coffee Growers works closely with member farmers to refine Pacamara production across their network. Their ripeness teams use refractometers and color‑based harvest standards to guide selective picking, and licensed Q graders cup every lot before export. Their demonstration farm, Finca Idealista, supports this work with agronomy training, a cool‑climate seed bank, and ongoing research into high‑performing varieties.
