Maximino's Maceration is a microlot from Santa Adela, a farm in Jinotega, Nicaragua. Grown by Maximo and his wife Marlene, they pick cherries at peak ripeness. This lot was processed using carbonic maceration, a fermentation method where whole unbroken cherries ferment in an oxygen-free environment. This process develops complex, fruity, and wine-like flavors, resulting in a cup with tasting notes of cassis, muscadine, and Autumn.
Gold Mountain Coffee Growers is a Nicaraguan farming group working directly with member farmers helping to establish direct trade relationships with roasters in the United States. They focus on precise cherry ripeness, using tools like refractometers and a dedicated ripeness team to ensure optimal picking for sweet, complex coffee.
Their flagship demonstration farm, Finca Idealista, models quality and sustainability with a cool microclimate and a living seed bank supporting high-cupping varieties. Gold Mountain also supports social projects including access to credit, water systems, community infrastructure, and protects a private rainforest reserve to preserve biodiversity.
Quality control is thorough, with licensed Q graders cupping every lot and using light sensors alongside human inspection to maintain standards. Technical assistance and agronomy support help farmers prevent disease and improve yields.
