Finca La Candela sits in Titiribí, Antioquia, producing exciting naturally processed Castillos. This lot features red and yellow Castillo cherries, dried using a combined fermentation technique: 50 hours aerobic, followed by 12 hours anaerobic. The result is a layered profile bursting with cacao nibs, ripe plum, strawberry, and blackberry—deep fruit complexity balanced by a silky, grounded finish.

This coffee arrives in the U.S. thanks to Paisa Coffee, a direct-trade importer founded by Yolima Taborda Rojas. Paisa was born from a bold idea: Yolima once brought her entire parents’ farm to the U.S. market to prove Colombian producers could thrive in the specialty space.
