The washed process is a method of coffee bean preparation at the farm level that involves several steps to produce a clean and bright flavor profile. Initially, harvested coffee cherries are sorted to remove unripe ones. The cherries are then pulped to extract the beans, which are subsequently fermented in water to break down the mucilage. After fermentation, the beans are washed to remove any remaining mucilage and then dried.

Grade 2 Ethiopian coffee is a specialty grade within the Ethiopian classification system that offers many of the same quality characteristics as Grade 1 but may include beans that are slightly smaller. Despite these minor differences, Grade 2 coffees still deliver a high-quality cup with excellent flavors that we find often rival many Grade 1 coffees.
