This Pacamara microlot comes from several member farmers within the Gold Mountain Coffee Growers network in Jinotega, Nicaragua, grown between 1,300 and 1,500 meters. Pacamara is a low-yielding specialty variety celebrated for its large seeds and expressive character, and Gold Mountain has spent years isolating and refining these lots through selective picking, controlled fermentation, and variety development. The consistency has been so compelling that GMCG is now distributing Pacamara seeds to more farmers across the network, expanding access to high-performing genetics.
After depulping, the coffee undergoes a precisely timed 18.47-hour fermentation, long enough to develop sweetness and structure while maintaining a clean, transparent profile. It's then washed and dried slowly on raised beds.
