Our house espresso, and the coffee most likely to be in the hopper if you walk into one of our cafés on a weekday morning. We build it from lots grown across the Americas and roast toward the same target every time: chocolate and cherry, sweet and round, with a body that holds its shape in a cortado and does not thin out under twelve ounces of milk. Pulled straight and served with seltzer alongside, the cherry comes forward and the whole thing opens up. It also brews beautifully as drip, and it is the bag we send most often to the person who wants one coffee that does everything well.
