Qabballe means "cold", a reference to the brisk mountain air high in Uraga, Guji, where fifteen smallholder farmers cultivate local heirloom varieties 74110 and 74112 on steep, cold-mountain plots at 2,225 meters. That cold air slows cherry ripening, concentrating sugars and shaping the lifted fruit and brightness that make this coffee so distinctive.
Cherries arrive at the Raro Nensebo Drying Station under cover of night, where Sookoo Coffee's Ture Waji and his team dry them slowly in thin, sunlit layers turned throughout the day, tended for nearly a month. Beds are kept to a strict 4cm depth for airflow, and fruit is rotated six times daily to ensure even drying across the entire lot. The result is one of Guji's cleanest naturals bright, sweet, and shaped by altitude, cold air, and attentive hands.
