High in the Gedeb District of Ethiopia's Gedeo Zone lies Chelbesa kebele — one of the most celebrated coffee-producing communities in the country. This natural lot comes from Danche Station, operated by SNAP Specialty Coffee, where over 800 smallholder farmers deliver ripe cherry daily. The coffee undergoes a careful 3-day dry fermentation in tanks before being sun-dried on raised beds for 16 to 21 days, a meticulous process that preserves the fruit clarity and sweetness that define Chelbesa's terroir.
Founded in Addis Ababa in 2008, SNAP now manages seven washing stations across Sidama, Yirgacheffe, and Guji, training thousands of farmers annually in climate-smart agriculture and intercropping, helping ensure that the birthplace of Arabica continues to thrive.
In the cup: rose hips, apricot, clementine, and passionfruit. Bright, aromatic, and deeply expressive of its origin. Best enjoyed as a pour over, Chemex, or AeroPress.
