Grown by fifteen smallholder farmers in the cold, high mountains of Uraga, Qabballe highlights local varieties 74110 and 74112 at their most expressive. Its name means “cold,” a reference to the brisk mountain air that slows ripening and shapes the coffee’s lifted fruit and brightness. Cherries are delivered at night to the Raro Nensebo Drying Station, where Sookoo Coffee dries them in thin, sunlit layers for 21–28 days — a patient, disciplined process that preserves clarity and sweetness. Through our partners at The Coffee Quest, we’re able to share the meticulous work of Ture Waji and his team, whose focus on sorting, airflow, and careful drying consistently produces some of Guji’s cleanest naturals.
