This washed Pink Bourbon comes from Finca La Esperanza, a four-hectare coffee farm at 1,700 meters in Pitalito, in the south of Huila, Colombia. Carlos Ramón Díaz and his wife Luisa bought the farm about twenty-seven years ago — Carlos had been working other farms across southern Huila and had learned the crop from them — and today their three grown children farm it alongside them, each working their own lots as well. Pink Bourbon is the variety the farm has become known for.
The processing is washed and traditional. Carlos picks only ripe cherries. The coffee is depulped and dry fermented for forty-five to fifty hours in a tiled tank, washed three times, and dried in a greenhouse over twelve to fifteen days depending on the weather.
