Maracaturra is a hybrid varietal combining Maragotype and Caturra. Although it grows less coffee cherries per tree than caturra, the beans it does grow are enormous and some of the biggest we have ever seen here at Mudhouse.
Carbonic Maceration is a processing method of coffee similar to that of the wine industry that goes by the same name. Carbonic maceration uses carbon dioxide inside sealed tanks to produce a very controlled fermentation process. We are seeing more and more coffee producers borrow, and innovate from other industries, as well as create entirely new processing methods exclusive to coffee.
