CUPPING AT HOME: A Step-by-Step Guide

by Miss Ristretto

Most professional cuppings are done with a light roast of the coffee under evaluation, as the lighter roast allows for more of the coffee’s individual characteristics to stand out and makes imperfections stand out like Kiss at a Rene Fleming Concert (the darker the roast, the more of the coffee’s distinct characteristics are disguised). Cupping can be done at any roast degree though, and since we are cupping to appreciate the integrity and genius of the roasters, and the sheer magic of the barista, we can cup our coffee as…

An Introduction to Coffee Cupping

A coffee’s quality is based on its flavors, aromas, its body, acidity, finish, and balance (To get the low-down on these factors check out “Describing a Cup of Coffee” in our “Deep Knowledge” section.) The purpose of cupping is to give each one of these factors the same opportunity to prove themselves (hence the super consistent variables) so that the intensity of each factor can be evaluated. The scores of all of a coffee’s individual factors determine its overall score, or cup quality.

Cupping provides a standardized method…

There is no such thing as a strong cup of coffee! The modifier “strong” is the most frequently misused descriptor of a coffee’s taste. When we say a coffee is “strong,” what do we mean – is it full bodied? A dark roast? Does it have a lot of caffeine?

Strong means many different things to many different people. To avoid this confusion, coffee professionals avoid using the word “strong” when describing a cup of coffee. Instead, there are approximately 5 different categories across which we can describe a cup of coffee to better understand and explain the experience. These…
